Ammonium salt is rock salt and has been used since ancient times, it gives liquorice a strong aromatic flavour as well as a sweet tangy aroma when added in lower quantities. An addition of 2 – 7,99 % makes the salmiak ‘extra strong’ and is considered not suitable for children according to German standards.
